Beef and lamb for low & slow — which cuts and why
Not every cut of beef or lamb is suitable for low & slow — and not every cut benefits from it. The choice between a steak and a brisket is not a matter of preference but of anatomy: which muscles the animal used most, how much connective tissue and collagen it contains, and how that collagen reacts to time and temperature. This guide explains the structure behind the choice — so you understand why a brisket needs 12 hours and a sirloin steak 8 minutes.
The anatomy behind the choice: collagen and connective tissue
Meat consists of muscle fibers and connective tissue. Connective tissue contains collagen — a tough protein that holds muscles together and converts to gelatin when slowly heated. That gelatin is what gives low & slow cooked meat its characteristic tenderness: the meat almost falls apart but still has texture, and it's infused with moist, sticky gelatin.
The amount of collagen in a muscle is directly related to how hard that muscle worked during the animal's life. Heavily used muscles — the shoulder, the chest (brisket), the neck, the legs — contain a lot of collagen and are tough with short cooking times. Lightly used muscles — the back, the loin — contain little collagen and are naturally tender. They don't need low & slow — it makes them worse.

The cheaper the cut, the more collagen — and the more it benefits from low & slow. The most expensive cuts (sirloin, tenderloin, rack of lamb) are expensive because they are naturally tender and do not require long preparation. Beef — which cuts for low & slow
The brisket is the chest muscle of cattle — one of the most heavily used muscles of the animal. Extremely high collagen content, a lot of intramuscular fat in the point, and a dense meat structure in the flat. At 110–120°C for 10–14 hours, all that collagen converts to gelatin. The result: meat that is melt-in-your-mouth tender, stays moist due to the fat in the point, and absorbs a deep smoky flavor. The brisket is the showpiece of low & slow — and one of the most difficult cuts to prepare perfectly.

Short ribs are the ribs with the adjacent meat from the chest and belly area of cattle. They consist largely of connective tissue and intramuscular fat — when cooked low & slow, they become tender and impart an intense, meaty flavor that is deeper than brisket. The combination of bone, fat, and meat also releases a lot of flavor during cooking. Chuck short ribs (from the front part) are thicker and better for low & slow than plate short ribs.

The beef shoulder — chuck roll or mock tender — is the beef counterpart to pulled pork. High collagen content, good fat marbling, and fully pullable at 90–95°C. These cuts contain little collagen and are naturally tender. Low & slow does not make them more tender — it dries them out and gives them a mushy texture. These cuts belong on high direct heat or using the reverse sear method — quick searing for the crust, possibly preceded by a short phase at low temperature. Lamb — which cuts for low & slow
The lamb shoulder is the quintessential low & slow cut for lamb — for the same reason as beef shoulder: heavily used muscle, high collagen content, good fat marbling. At 110–130°C for 4–7 hours, the shoulder becomes so tender that the meat falls off the bone. The flavor is more intense than rack of lamb or lamb chops due to higher fat marbling and the Maillard reaction that develops in the rub layer during long cooking. The same shoulder as above, but cooked to 90–95°C so that the meat is fully pullable. Pulled lamb is not as well-known as pulled pork but offers a deeper, richer flavor. The leg of lamb is the hind leg of the lamb — moderately used, medium collagen content. It benefits from low & slow but is less suitable for pulling than the shoulder due to lower fat marbling and a higher proportion of lean muscle meat. The leg is ideally suited for an internal temperature of 70–75°C — tender but not yet falling apart. At 85–90°C, it is suitable for pulling off the bone.
Rack of lamb and lamb chops come from the back of the lamb — lightly used muscles, low collagen content, naturally tender. Low & slow does not make them better — it dries them out and removes the desired pink core. These cuts belong on direct heat: 8–12 minutes at 200–250°C, target temperature 58–62°C for medium-rare. Which BBQ method suits which cut?
The cut not only determines the cooking time but also the ideal BBQ setup. A brisket requires 12+ hours of stable low heat — that requires a kamado, water smoker, or a kettle with the right charcoal setup. A lamb shoulder is more accessible and can also be done on a kettle with the 2-zone method. A rack of lamb only needs direct heat — a regular kettle or even a grill pan suffices.

Choosing a rub per cut: matching flavor to the meat
The intensity of the rub should match the intensity of the cut. A brisket needs a powerful, smoky rub that survives long cooking and creates a deep bark. A lamb shoulder tolerates spicy, aromatic rubs — the fat marbling carries the flavors. A rack of lamb requires subtlety — too strong a rub will overshadow the delicate character of the meat.
