Low & slow on a kamado — the practical session guide
A kamado is the most promising device for low & slow — and at the same time, the device where most mistakes are made in the first sessions. The ceramic walls are both an advantage and a pitfall: they retain heat so well that adjustments are slow and overshoot is difficult to correct. This guide is not about what a kamado is or which rubs go with it — that information is already elsewhere. The deflector plate: how and where to place it
The deflector plate — also known as a heat deflector or plate setter — is the component that transforms a kamado from a direct grill into an indirect oven. Without a deflector plate, the meat receives direct radiant heat from the coals from below — not suitable for low & slow. With a deflector plate, the heat circulates around the meat without direct radiation.
The deflector plate goes under the grill grate, directly on the firebox rim or on special holders — depending on the brand. The legs or feet point upwards on a Big Green Egg, downwards on some other brands. Check your kamado's manual. The grill grate then goes on top of the deflector plate, and the meat on the grate.
Most kamados come with a ceramic deflector plate. Cast iron deflector plates also exist and retain more heat — which can be an advantage for long sessions but increases the risk of overshoot when setting. For low & slow, the ceramic version is the safest choice.
During long sessions, fat drips from the meat onto the deflector plate. This fat burns slowly and can produce bitter smoke if the plate gets too hot. Loosely place a piece of aluminum foil over the deflector plate, or use a drip pan on the deflector plate to catch fat. Make sure that air circulation around the deflector plate is not completely blocked.
Heat soak: the step most beginners skip
Heat soak is allowing the entire kamado to stabilize at the target temperature — including the ceramic walls, the deflector plate, and the grill grate — before putting the meat in. It's the most skipped step and the step that makes the biggest difference.
Why it matters: if you put the meat directly on a kamado that has just reached temperature, the still cold ceramic walls and deflector plate absorb heat from the air inside the kamado. The temperature drops — sometimes by 10–20°C — and you try to adjust by opening the vents. This causes the temperature to rise too high and you get overshoot. Everything starts with insufficient heat soak.
Once the target temperature is reached — say 120°C for pulled pork — wait at least 15–20 minutes at that temperature before putting the meat in. For a large kamado (XL) or in cold weather: 25–30 minutes. The temperature should be stable, not rising or falling. Only then do you add the meat.
Preventing and correcting overshoot
Overshoot — the kamado gets too hot and you try to bring it back to the target temperature — is the biggest frustration point with low & slow on a kamado. The ceramic walls retain heat so well that a kamado that is 30°C above the target temperature can sometimes take an hour to cool down.
Always set the vents conservatively and work your way up to the target temperature — never the other way around. Start with both vents almost closed and open them incrementally. A kamado that slowly warms up to 120°C is easier to stabilize than a kamado you have to bring back from 160°C to 120°C.
If the kamado is too hot: close the bottom vent almost completely — leaving only a small gap. Close the top vent to a quarter open. Wait 10–15 minutes. Only then assess if further adjustment is needed. Never close both vents completely — the fire will smother and produce bitter smoke.
Heating a kamado is easy. Cooling down takes time. Always work from low to high, never the other way around. This applies even more to low & slow where the temperature difference between “good” and “too hot” is small.
Managing long sessions: refueling and fuel
A kamado uses significantly less fuel than a kettle — but for sessions of 10–14 hours (brisket, pulled pork), you'll need to consider refueling. The approach is different from a kettle because the ceramic walls retain heat after refueling.
Fill the firebox completely for sessions of 8+ hours with Kokoko Eggs or Quebracho briquettes. A fully filled firebox with Kokoko Eggs on a standard kamado (Large size) provides 8–10 hours at 110–120°C. Lump charcoal burns faster and lasts 5–6 hours. For a brisket of 12+ hours: use briquettes and plan one refueling moment.
Unlike a kettle, you can add cold fuel to a kamado without a significant temperature drop — the ceramic walls retain so much heat that the temperature only drops by 5–10°C and recovers within 5–10 minutes. Add the new fuel along the edge of the glowing coals, not on top. Briefly open the vents a little more after refueling and close them again once the temperature is stable.

The stall on a kamado: different from a kettle
The stall — the period during which the core temperature stagnates due to evaporative cooling — also occurs in a kamado. But there are two important differences compared to a kettle or offset smoker.
The stall lasts longer on a kamado. The closed, moist environment of a kamado slows down evaporation on the meat's surface — the humidity in a kamado is higher than in an open offset smoker. This means a longer stall, but also that the meat dries out less during the stall. Expect a stall of 3–5 hours for a large brisket on a kamado.
Wrapping on a kamado works differently. Most pitmasters opt for butcher paper instead of foil for brisket on a kamado — the moist environment of the kamado combined with foil gives too much of a "steamed" texture. Butcher paper compensates better. For pulled pork, foil is fine.

Bark on a kamado: how to maximize it?
A kamado naturally produces a thicker, deeper bark than a kettle — due to its stable temperature, low airflow, and closed environment. But there are a few specific choices that further improve the bark.
Apply the rub at least 4 hours in advance — or the evening before the session. The closed, moist environment of a kamado draws the spices deeper into the meat. The pellicle — the slightly sticky meat surface that forms after prolonged rub contact time — gives the smoke flavor and rub better adhesion.
A kamado retains smoke longer than an open BBQ. Two smoking wood chunks are sufficient in most cases for a complete low & slow session. More smoking wood in a kamado quickly gives a bitter smoke flavor — the smoke has no direct escape and circulates around the meat for longer. Less is more.
Every time you open the lid, you not only lose heat — you also lose the built-up smoke environment. The bark that forms in the first 3–4 hours does so in a stable, smoke-rich environment. Open the lid only when absolutely necessary: for wrapping at the stall and for the doneness test at the end.
