Temperature, Time, and Texture on the BBQ — the three tests explained
A core temperature is not the only answer to the question "is it done?" — sometimes it's even the wrong answer. Ribs that reach 93°C but don't bend aren't done. Brisket that reaches 97°C but still offers resistance during the probe test needs more time. Doneness in BBQ is an interplay of three things: temperature, time, and texture. This guide explains how to read these three — and when to use which test.
Why core temperature alone is not enough
Core temperature measures one thing: how warm the meat is inside. What it doesn't measure: whether the collagen has fully converted to gelatin, whether the connective tissue is soft enough, or whether the texture has reached the right tenderness. For quick-grilled meats like steak or chicken thighs, core temperature is the only measure that counts. For low & slow, it's the starting point, not the endpoint.
The difference lies in the type of meat. Muscle meat with little connective tissue — sirloin, lamb chops, chicken breast — is done as soon as the correct core temperature is reached. Collagen-rich meat — brisket, spare ribs, shoulder, lamb shoulder — needs time to convert that collagen, regardless of the thermometer reading.

The three tests: temperature, time, and texture
Temperature — the core thermometer
The core thermometer is your most reliable tool for all meat. Insert it into the thickest part of the meat, away from bone and fat — bone conducts heat differently than meat and will give an incorrect reading. For brisket: insert into the flat, not the point. For ribs: insert between the ribs in the thickest part of the meat.
Use the core temperature as a threshold value: below the threshold, it's definitely not done; above the threshold, you can perform the texture test. Never the other way around.
Time — the cooking time estimate
Cooking time is never exact — but it is a reliable planning indicator. Use cooking time to plan your session and know when to start the texture test. A 4 kg brisket at 120°C takes 10–14 hours: you know that in advance. If you start probing after 6 hours, you're wasting time and letting heat escape.
The relationship between time and temperature is also a valuable signal: if the meat reaches its final temperature much faster than expected, your BBQ was probably too hot. If it takes much longer, there may have been a longer stall or the temperature dropped.

Texture — the definitive doneness test
Texture is the final judgment for low & slow. There are three texture methods, each for a different type of meat:
The probe test: Insert a metal skewer, long fork, or the probe end of your thermometer into the meat. If it slides in without resistance — like into soft butter — it's done. If there's resistance: more time. This works best for brisket, lamb shoulder, and pulled pork.
The bend test: Lift the rack of ribs with tongs in the middle. A done rack will bend immediately, the ends will drop down, and the bark will begin to crack. An undercooked rack is stiff and barely bends. This is the most common test for spare ribs — more reliable than core temperature alone.
The pull test: Gently pull on a bone in the spare ribs or lamb rack. A done rib will give slightly but won't let go of the meat easily — that would be overcooked. If the bone pulls out completely clean: too long. If it holds fast: needs more time.

Overcooked vs. undercooked: how to recognize it?
The line between perfect and overcooked is thinner than the line between undercooked and perfect. Undercooked meat always gives clear signals: resistance during the probe test, stiffness during the bend test, bone that is stuck. Overcooked meat gives more subtle but equally clear signals.

How to use a core thermometer correctly?
A core thermometer only gives reliable readings if you use it correctly. The most common mistakes:
Inserting too shallowly: The sensor must be in the center of the thickest part — not at the edge. Most digital thermometers measure at the tip of the probe; it must be at least 2–3 cm away from the outside.
Hitting bone: Bone conducts heat better than meat and will always give a higher reading. Relocate the probe if you feel bone contact — you'll feel the resistance immediately.
Measuring too early: Do not open the BBQ for the probe test before the time guideline has passed. Each time you open it, you lose 10–15 minutes of temperature and disrupt the cooking process.
Trusting one measurement: Always measure in two places for large cuts. Brisket: flat and point. Whole chicken: breast and thigh. Take the lowest reading as the starting point.
