The Bark and the Smoke Ring: What is it and how does it form?
Two terms you encounter everywhere in BBQ circles, but which are often used interchangeably or incorrectly: the bark and the smoke ring. People often think that a thick pink ring under the meat means it tastes extra smoky, and that a dark crust is always burnt. Both are incorrect.
In this article, we explain what chemically happens with both phenomena, why one says nothing about taste and the other has everything to do with it, and how you can control both yourself.
What exactly is the bark?
The bark is the dark, flavorful crust that forms on the outside of meat during slow cooking. It is not burning, but the result of three processes happening simultaneously: the Maillard reaction between amino acids and sugars, caramelization of sugars in the rub, and dehydration of the outer layer of meat due to sustained heat.
Sugar and spices in a dry rub are applied directly to the meat without dilution with moisture. A wet marinade introduces extra moisture that must first evaporate before the bark can form.
What is the smoke ring?
The smoke ring is the pink discoloration just below the surface of smoked meat, usually 3 to 8 millimeters deep. It is caused by a chemical reaction: nitrogen dioxide from the smoke dissolves into the moist surface of the meat and forms nitrites. These nitrites react with myoglobin and retain that pink color even after the meat is cooked.
A thick smoke ring does not automatically mean more smoky flavor. The reaction stops as soon as the core temperature rises above approximately 60°C. Meat cooked slowly at a low temperature develops a thicker ring, regardless of the actual amount of smoke absorbed.
How to get a good bark?
Dry rub, no marinade
Spices and sugar applied directly to the meat, without diluting moisture.
Enough time
Bark forms gradually. Low & slow provides the time caramelization needs.
Do not open too often
Every time you open the lid, the temperature drops and moisture escapes.
Do not baste excessively
Basting too often keeps the surface wet, which keeps the bark softer.

How to get a nice smoke ring?
Low cooking temperatures between 100 and 135°C give the meat more time in the temperature range where the reaction occurs. A moist surface helps the nitrogen dioxide dissolve better.
