Which BBQ Sauce Goes with Which Rub?
A good dry rub actually doesn't need sauce — the spices provide enough flavor and the bark adds texture. But sometimes you want that extra something. The trick is to choose a sauce that enhances the flavor of your rub instead of overpowering it.
🥩 Memphis BBQ Rub — Classic sweet-smoky BBQ sauce
- Perfect match: Thin, vinegar-based BBQ sauce with smoked paprika and brown sugar
- Use as: Glaze ribs for the last 15 minutes, or as a dipping sauce for pulled pork
- Do not combine with: Thick, sweet ketchup-based sauce — that makes it too sweet
Homemade: Combine 200ml ketchup, 60ml apple cider vinegar, 2 tbsp brown sugar, 1 tbsp Worcestershire, 1 tsp Memphis BBQ rub. Simmer for 15 minutes over low heat.
🌽 Tex-Mex BBQ Rub — Chipotle or salsa
- Perfect match: Chipotle sauce, salsa roja, or a smoky tomato sauce with jalapeño
- Use as: Dipping sauce for brisket, or as a topping for a Tex-Mex pulled chicken burger
- Surprising combination: Guacamole as a cool counterpart to spicy Tex-Mex chicken
🌟 Carolina Gold — Mustard sauce
- Perfect match: Yellow mustard BBQ sauce (Carolina Gold style)
- Use as:: Dipping sauce for pulled pork, or as a glaze on chicken for the last 10 minutes
- Do not combine with: Red ketchup-based sauce — that clashes with the mustard base of the rub
🌶️ Jamaican Jerk — Mango chutney or yogurt sauce
- Perfect match (mild): Mango chutney or coconut yogurt sauce
- Perfect match (spicy): Scotch bonnet hot sauce
- Use as: Dipping sauce for chicken wings, or as a topping on a Jerk burger
🏿 Shawarma BBQ Rub — Garlic sauce or tahini
- Perfect match: Garlic sauce (toum), tahini, or yogurt-cucumber sauce
- Use as: Dipping sauce for chicken or lamb, or as a spread in a wrap
- Surprising combination: Hummus as a dipping sauce for Shawarma chicken
🌍 Korean BBQ Rub — Gochujang sauce or sesame dressing
- Perfect match: Gochujang sauce or sesame-soy sauce dressing
- Use as: Dipping sauce for chicken wings or beef short ribs, or as a glaze for the last 10 minutes
- Surprising combination: Kimchi as a cool, sour counterpart
🌿 Toscana Fire — Chimichurri or salsa verde
- Perfect match: Chimichurri or salsa verde (parsley, garlic, olive oil, lemon)
- Use as: Dipping sauce for chicken or lamb, or as a finishing sauce over the meat
- Do not combine with: Sweet BBQ sauce — that overpowers the subtle fennel flavors
General sauce rules for BBQ
- Never apply sauce too early — the sugar will burn. Only apply sauce in the last 10–15 minutes
- Less is more — a good rub needs little sauce. Use sauce as an accent, not as the main flavor
- Cool sauce with spicy rub — yogurt, mango, or coconut tempers the heat of Jamaican Jerk or Tex-Mex
