Homemade BBQ sauce — smoky and full of flavor
Short answer: Combine ketchup, apple cider vinegar, brown sugar, Worcestershire, mustard and BBQ rub in a saucepan. Simmer for 15 minutes over low heat. Done — better than anything from a bottle.
Homemade BBQ sauce is ready in 20 minutes and always tastes better than bottled. You control the balance of sweet, sour, and smoky — and with a pinch of BBQ rub, you instantly add depth that you'll never get from a jar.
Use as a glaze on spare ribs, dipping sauce for pulled pork or a finishing sauce for any BBQ dish.
What do you need?
For approx. 400ml sauce:
- 200ml ketchup
- 60ml apple cider vinegar
- 60ml water
- 3 tbsp brown sugar
- 2 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 1 tsp Memphis BBQ rub
- 1 tsp smoked paprika powder
- ½ tsp garlic powder
- Cayenne pepper to taste
- Salt and black pepper
The Memphis BBQ rub already contains paprika, brown sugar, and spices — it instantly gives the sauce depth and complexity. Taste after adding and adjust other ingredients to your liking.
Preparation
- Combine all ingredients in a saucepan and stir well.
- Bring to a boil over medium heat, stirring continuously.
- Reduce heat to low and simmer for 15 minutes without a lid, stirring occasionally.
- The sauce is ready when it has thickened slightly and clings to the spoon.
- Taste and season: more vinegar for acidity, more sugar for sweetness, more cayenne for kick.
- Let cool and store in an airtight jar in the refrigerator (lasts up to 2 weeks).
Apply the sauce during the last 15 minutes of the 3-2-1 method — phase 3, foil off. Baste a layer every 5 minutes for a glossy, caramel-like bark. Do not apply sooner, otherwise the sugar will burn.
Variations
Adjust the sauce to your BBQ style:
- Memphis-style: more vinegar, less sugar — thinner and spicier
- Kansas City-style: more brown sugar and molasses — thicker and sweeter
- Carolina Gold: replace ketchup with mustard for a yellow, tangy sauce
- Spicy: add 1 tbsp sriracha or chipotle in adobo
Sauce too sour or too sweet? Restoring the balance
The most common mistake when making homemade BBQ sauce is adding too much of one flavor too quickly. BBQ sauce has three pillars of flavor that balance each other:
- Sour (apple cider vinegar, lemon juice) — cuts through fat, adds freshness and balance
- Sweet (brown sugar, honey, molasses) — softens acidity, adds shine and caramelization
- Umami (Worcestershire, tomato paste, soy sauce) — adds depth and body, binds flavors
Too sour? Add a teaspoon of brown sugar, stir and taste. Repeat until balanced.
Too sweet? Add a splash of apple cider vinegar — a tiny bit at a time, vinegar is potent.
Too bland? A teaspoon of Worcestershire or a pinch of salt will bring out the flavors.
Too thin? Simmer longer without a lid — reducing concentrates all flavors.
Too thick? Add a splash of water or apple juice and stir well.
The key: always add small amounts and taste in between. It's easier to throw a sauce off balance than to bring it back.
