A BBQ for 10, 15, or 20+ people is a different game than grilling for 4. Logistics change, timing becomes more critical, and the potential for chaos increases if you don't plan ahead. This guide helps you avoid that.

How much meat per person?

The rule of thumb: calculate 300–400 grams of raw meat per person if it's the main meal. For an informal BBQ with many side dishes, you can go for 250 grams. Always buy 10–15% extra for unexpected guests or second servings.

Rub dosage

10–15 grams per kilo of meat. A 100g sachet is good for 6–10 kilos of meat.

For large groups, variety is essential. Always use at least two rubs side-by-side — one mild, one spicier. This ensures everyone finds something they like and naturally sparks conversation at the table about which one is best.

Timing for large groups

The biggest problem with large BBQs: not everything is ready at the same time. Divide grilling into rounds and communicate this to your guests beforehand.

Round 1 — fastest pieces first

Skewers, wings, sausages — 20–25 minutes. Guests can start eating while the main course cooks.

Round 2 — main course

Chicken thighs, spare ribs — 30–40 minutes indirect. Prepare as much as possible in the oven and finish on the grill.

Round 3 — finishing touches

Vegetables, bread, dessert — 10 minutes. This way you don't have to stand by the BBQ all evening.

Practical tips for large groups

Multiple grills

For 20+ people, one grill is a bottleneck. Prepare a second grill or extra grate.

Rub meat in advance

Do this the evening before. For large quantities, this otherwise takes too much time on the day itself.

Cold side dishes

Coleslaw, potato salad, and tomato salsa can be made the day before and improve with time.

Warming box or oven

Keep cooked meat warm in an oven at 60°C while the rest is still grilling.

Self-service

For large groups, a buffet setup works better than serving. Less waiting time, more freedom.
