The 3-2-1 Method for Spareribs: Step-by-Step Explained

The 3-2-1 method is the most commonly used technique for making perfect spare ribs on the BBQ. The name refers to the three phases: 3 hours smoking, 2 hours in foil, 1 hour finishing. The result is fall-off-the-bone ribs, a deep smoky flavor, and a crispy, caramelized bark. Perfect every time — even if it's your first attempt.

Step 1: Preparation

  1. Remove the membrane from the underside of the spare ribs. Slide a knife under the membrane at a rib, grip it with paper towels, and pull it off in one swift motion.
  2. Pat the spare ribs dry with paper towels on both sides.
  3. Rub generously — top, bottom, and sides. Press firmly. Use about 4–5 tablespoons per rack.
