Spareribs are the ultimate BBQ dish. But they require patience. If you're in a hurry, it's better to grill a steak. If you take your time, you'll be rewarded with meat that falls off the bone, a deep bark, and an unforgettable flavor.
In this recipe, you'll learn the 3-2-1 method — the most reliable technique for perfect spareribs at home, on any BBQ.
What do you need?
For 4 people:
- 1.5 to 2 kg spareribs (baby back ribs or St. Louis cut)
- Memphis BBQ rub — 70g per kg of meat
- Mustard or olive oil as a binder
- Aluminum foil
- Meat thermometer
- BBQ with lid (charcoal, gas, or kamado)
- Smoking wood: hickory or oak chips
Baby back ribs are more tender and cook faster. St. Louis cut has more meat and fat and provides a richer flavor. For the 3-2-1 method, both work — adjust the times: baby back 2-2-1, St. Louis 3-2-1.
Preparation — the evening before
Good spareribs start the evening before the BBQ. This is what you do:
- Remove the membrane from the back of the ribs — slide a knife under the membrane, grab it with a piece of paper towel, and pull it off in one motion.
- Pat the ribs dry with paper towels.
- Rub a thin layer of mustard or olive oil over the meat as a binder.
- Generously apply the Memphis BBQ rub — front and back. Rub in firmly.
- Wrap in plastic film and refrigerate overnight.
The membrane on the back of the ribs is tough and prevents the rub from penetrating properly. Always remove it for the best result.
The 3-2-1 method step by step
The 3-2-1 method is the most reliable way for perfect spareribs. Each phase has a purpose.
Hours smoking
120°C indirect heat. Add smoking wood. Close the lid. The rub dries and the bark begins to form.
Hours in foil
Wrap the ribs tightly in aluminum foil. Add a splash of apple juice. Back on the BBQ at 120°C. The meat becomes tender.
Hour finishing
Remove the foil. Back on the BBQ. The bark recovers and becomes crispy. Optional: last 15 min a layer of BBQ sauce.
Keep the BBQ constantly at 110–120°C. Too hot and the sugar in the rub burns. Too cold and the cooking time increases. A BBQ thermometer in the lid is not a luxury.

The toothpick test: insert a toothpick between the bones. If it goes in without resistance, the ribs are ready. Or use a thermometer: 93–96°C is perfect. The meat also visibly pulls back from the bones.
