The foundation of a good BBQ sauce
A classic American BBQ sauce has 4 balanced flavor components:
- Sweet — brown sugar, honey, or molasses
- Sour — apple cider vinegar or lemon juice
- Smoky — smoked paprika, liquid smoke
- Spicy — cayenne pepper, chili flakes

Basic recipe
- 200ml tomato ketchup
- 3 tbsp brown sugar
- 3 tbsp apple cider vinegar
- 2 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp cayenne pepper
- Salt and pepper

Preparation
- Mix all ingredients in a saucepan
- Bring to a boil over medium heat
- Reduce heat to low and simmer for 15–20 minutes until the sauce thickens
- Taste and season — more vinegar for more sour, more sugar for sweeter
- Let cool and store in a jar in the refrigerator (up to 2 weeks)
Pro tip: Combine the BBQ sauce with your dry rub for maximum flavor depth. Baste spareribs with the sauce during the last 30 minutes for a glossy, caramelizing layer.
