Dosage
- Skinless chicken thighs: 65g per 1.5 kg meat

- Ground beef & vegetables: rub generously, rest for at least 20 minutes
Technique & tips
Pat the meat dry, rub generously, and let it rest in the refrigerator for at least 30 minutes. Grill over indirect heat until the internal temperature reaches 70–72°C for chicken. Also excellent in the oven at 200°C for a crispy crust.
