Smoky Black Bean & Corn Salsa | Tex Mex BBQ Rub
This fresh, smoky salsa combines black beans, grilled corn, tomato and lime with our Tex Mex BBQ Rub. Serve as a dip with tortilla chips or as a side dish with your grilled meat — an essential part of your Tex Mex BBQ table.
Ingredients (4–6 servings)
- 1 can black beans (400g), drained and rinsed
- 2 corn on the cob (or 200g corn kernels)
- 2 ripe tomatoes, diced
- 1 red onion, finely chopped
- 1 red chili, finely chopped (to taste)
- Handful of fresh cilantro, coarsely chopped
- Juice of 1 lime
- 2 tbsp olive oil
- 1–1.5 tsp Tex Mex BBQ Rub
- Salt to taste
Preparation
- Grill the corn on the cob on the BBQ (direct, high heat) until nicely charred, about 8–10 minutes. Then cut the kernels off the cob.
- Combine the beans, grilled corn, tomato, onion, chili, and cilantro in a bowl.
- Prepare a dressing with lime juice, olive oil, and the Tex Mex BBQ Rub.
- Mix the dressing into the salsa and season with salt.
- Let it sit for at least 15 minutes for the flavors to meld. Serve at room temperature.
Tip
Make a larger batch — this salsa is even better the next day.
