Smoky Black Bean & Corn Salsa | Tex Mex BBQ Rub

This fresh, smoky salsa combines black beans, grilled corn, tomato and lime with our Tex Mex BBQ Rub. Serve as a dip with tortilla chips or as a side dish with your grilled meat — an essential part of your Tex Mex BBQ table.

Ingredients (4–6 servings)

  • 1 can black beans (400g), drained and rinsed
  • 2 corn on the cob (or 200g corn kernels)
  • 2 ripe tomatoes, diced
  • 1 red onion, finely chopped
  • 1 red chili, finely chopped (to taste)
  • Handful of fresh cilantro, coarsely chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1–1.5 tsp Tex Mex BBQ Rub
  • Salt to taste

Preparation

  1. Grill the corn on the cob on the BBQ (direct, high heat) until nicely charred, about 8–10 minutes. Then cut the kernels off the cob.
  2. Combine the beans, grilled corn, tomato, onion, chili, and cilantro in a bowl.
  3. Prepare a dressing with lime juice, olive oil, and the Tex Mex BBQ Rub.
  4. Mix the dressing into the salsa and season with salt.
  5. Let it sit for at least 15 minutes for the flavors to meld. Serve at room temperature.

Tip

Make a larger batch — this salsa is even better the next day.
