Tzatziki recipe — creamy garlic sauce for the BBQ

Ingredients

  • 500g Greek yogurt (10% fat)
  • 1 cucumber
  • 2–3 cloves of garlic
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar or lemon juice
  • Fresh dill or mint
  • Salt to taste

Preparation

  1. Grate the cucumber coarsely and squeeze out the liquid well with a clean tea towel — this is the most important step for thick tzatziki
  2. Press the garlic
  3. Mix yogurt, cucumber, garlic, olive oil, and vinegar
  4. Add fresh dill or mint
  5. Season with salt
  6. Let rest in the refrigerator for at least 30 minutes

Pro tip: Always use full-fat Greek yogurt (10% fat) — low-fat yogurt will result in watery tzatziki. And really squeeze the cucumber well.
