BBQ Chicken Thighs — Dry Rub Recipe | Juicy & Crispy

Chicken thighs are the best chicken for the BBQ — juicier than chicken breast, more forgiving than drumsticks, and ready in 30 minutes. The higher fat content ensures they never dry out, even if you leave them on the BBQ a little too long. With a dry rub, you get a crispy, golden-brown skin and an intense flavor. Here's the recipe.

Bone-in or boneless chicken thigh?

  • Bone-in and skin-on (recommended) — the bone adds extra flavor during cooking, the skin becomes crispy and protects the meat. Best results on the BBQ.
  • Boneless, skin-on — cooks faster, easier to eat. Good alternative.
  • Boneless and skinless — least fat, dries out faster. Use for kebabs or wraps. → Chicken kebab recipe

Which dry rub should you use?

  • Korean BBQ Rub — Gochugaru, sesame seeds, ginger. Sweet-spicy and fruity — gives chicken thighs a beautiful red color and a crispy, caramel-like skin. The favorite for chicken thighs.
  • Jamaican Jerk — Spicy, herbaceous, Caribbean. Gives chicken thighs an intense, smoky flavor with a kick. Perfect for those who want it spicier.
  • Shawarma BBQ Rub — Cumin, coriander, cinnamon. Warm and aromatic — gives chicken thighs a Middle Eastern flavor that appeals to everyone.
  • Memphis BBQ Rub — Sweet-smoky. The brown sugar caramelizes on the skin for a golden-brown, crispy exterior. The family choice.
  • Toscana Fire — Fennel seeds, smoked paprika. Aromatic and Mediterranean — for an elegant chicken thigh.

Equipment

Step-by-step recipe

Step 1 — Preparation

  1. Pat dry — with paper towels on all sides, including under the skin. This is the most important step for crispy skin.
  2. Rub under the skin — carefully slide your fingers between the skin and the meat and rub the seasoning directly onto the meat. This gives the deepest flavor.
  3. Rub outside — also generously rub the outside of the skin. Use olive oil as a base.
  4. Let it sit — at least 1 hour at room temperature, or overnight uncovered in the refrigerator for the crispiest skin.

Step 2 — Prepare the BBQ

  1. Prepare the BBQ for the two-zone method: coals on one side (direct zone), empty side (indirect zone). → More about direct vs. indirect heat
  2. Aim for 180–200°C with the lid closed.

Step 3 — Indirect cooking (20–25 minutes)

  1. Place the chicken thighs skin-side up on the indirect zone. Close the lid.
  2. Cook for 20–25 minutes at 180–200°C without opening.
  3. Check the core temperature: aim for 75–78°C in the thickest part (not the bone).

Step 4 — Crisp the skin (5–8 minutes)

  1. Move the chicken thighs to the direct zone, skin-side down.
  2. Grill for 3–4 minutes over direct heat until the skin is golden brown and crispy. Keep a close eye on it — sugar in the rub can burn quickly.
  3. Flip and grill for another 1–2 minutes on the meat side.
  4. Core temperature should be at least 80–85°C in the thickest part of the thigh.

Step 5 — Rest and serve

  1. Let rest for 5 minutes before serving.
  2. Serve immediately — chicken thighs are best hot with crispy skin.

Core temperatures for chicken thighs

Measurement Temperature Note
Minimum safe 75°C Food safe, but still juicy
Ideal (recommended) 80–85°C Tender, juicy, and fully cooked
Overcooked 90°C+ Starts to dry out

Tip: Chicken thighs are more forgiving than chicken breast — they stay juicy up to 90°C. Always measure in the thickest part, not the bone.

Tips for perfect chicken thighs

  • Always pat dry — moisture is the enemy of crispy skin
  • Rub under the skin — gives the deepest flavor
  • Marinate overnight — uncovered in the refrigerator dries the skin even further
  • Indirect first, then direct — even cooking first, crispy skin as the last step
  • Crisp the skin over direct heat — but watch carefully with rubs containing sugar
  • Chicken thigh is more forgiving than chicken breast — ideal for beginners

Frequently Asked Questions

How long do chicken thighs need on the BBQ?

Total approx. 25–35 minutes: 20–25 minutes indirect at 180–200°C + 5–8 minutes direct for crispy skin. → More about cooking times for chicken

Bone-in or boneless chicken thigh on the BBQ?

Bone-in gives more flavor and stays juicier. Boneless cooks faster and is easier to eat. For the BBQ, bone-in and skin-on is the best choice.

Why don't my chicken thighs get crispy?

Most common causes: skin not patted dry enough, not enough direct heat at the end, or removed from the BBQ too early. Ensure dry skin and always finish with 3–4 minutes over direct heat.

Are chicken thighs suitable for children?

Yes — use a mild rub such as Memphis BBQ Rub (sweet-smoky, not spicy). → BBQ with children: mild rubs & recipes
