Grilled zucchini on the BBQ
Short answer: Slice zucchini into 1 cm thick pieces, brush with olive oil and Toscana Fire rub. Grill for 3–4 minutes per side over high direct heat until nice grill marks appear. Serve with lemon.
Grilled zucchini is the fastest BBQ side dish. Ready in 10 minutes, light in flavor, and versatile enough to accompany any main course. The Toscana Fire rub gives it an Italian herbal depth that pairs perfectly with the smoky flavor of the grill.
What do you need?
For 4 people:
- 3 medium zucchini
- 2 tbsp olive oil
- 1 tsp Toscana Fire rub
- Sea salt and black pepper
- 1 lemon, cut into wedges
- Optional: basil, grated Parmesan, pine nuts
Cut the zucchini diagonally into 1 cm slices — this provides more surface area for grill marks and better texture. Too thin (under 0.5 cm) will fall apart; too thick (above 1.5 cm) will not cook through.
Preparation
- Cut the zucchini diagonally into slices of about 1 cm.
- In a bowl, mix with olive oil, Toscana Fire rub, salt, and pepper.
- Preheat the BBQ to high direct heat (approx. 220°C).
- Place the slices on the grate and grill for 3–4 minutes without moving.
- Flip once and grill for another 2–3 minutes.
- Remove from the BBQ and serve immediately with a lemon wedge.
Leave the zucchini undisturbed — this will give you nice grill marks and prevent sticking. After 3–4 minutes, it will naturally release from the grate when it's ready to flip.
Variations
Adapt the zucchini to your main course:
- Italian: Toscana Fire rub + Parmesan + basil + balsamic
- With spareribs: Memphis rub + a splash of honey
- With shawarma: Toscana Fire + tahini dressing + fresh mint
- Stuffed: halve the zucchini lengthwise, scoop out, and fill with feta and herbs
