Grilled bell peppers on the BBQ — sweet, smoky, and full of flavor

Grilled bell peppers are one of the most delicious vegetables to come off the BBQ. The heat caramelizes the sugars and gives them a deep, sweet smoky flavor — and with a dry rub, they become an irresistible side dish or a main course for vegetarians.

Why bell peppers on the BBQ?

Bell peppers are naturally sweet and juicy. On the grill, the sugars caramelize, creating a deep smoky flavor. The skin chars slightly — that's exactly where the flavor is. Red and yellow bell peppers are sweeter than green ones and work best on the BBQ.

Smoked paprika — what is it and why do you use it in BBQ?

01 — Preparation

You can grill bell peppers in two ways:

  • In quarters — cut the bell pepper into 4 pieces, remove seeds and membranes. Brush with olive oil and rub. Easy to handle.
  • Whole — place the whole bell pepper directly on the grate and turn regularly. The skin will char all around — then you can peel it for a soft, smoky interior.

Pro tip: Grilled bell peppers in quarters are perfect as a side dish. Whole grilled and peeled bell peppers are delicious in a salad or as a tapenade.

02 — Which rub pairs well with bell peppers?

  1. Shawarma — warm and aromatic, perfect for a Middle Eastern BBQ night. More about Shawarma rub
  2. Tex-Mex — cumin and chili enhance the sweetness of the bell pepper. More about Tex-Mex rub
  3. Memphis — sweet and smoky, classic combination
  4. Toscana Fire — Italian herbs and rosemary, perfect with red bell peppers

03 — On the BBQ

  1. Preheat the BBQ for direct heat, 200–220°C (390–430°F)
  2. Place the quarters skin-side up on the grate
  3. Grill for 4–5 minutes, flip and grill for another 3–4 minutes
  4. The edges can char slightly — that adds extra flavor

Direct vs. indirect heat — when to use which?

Serving

Serve directly from the grill with a drizzle of olive oil and fresh basil. Or let cool and use in a salad, wrap, or as a tapenade with feta.
