Sausages and burgers are BBQ classics — but with a dry rub, you can take them to another level. A rub adds extra depth of flavor, a better crust, and a professional result. In this guide, we explain how to optimally use a rub on sausages and burgers.

When to Apply the Rub?

For burgers, you have two options:

  • Mix into the ground meat — mix the rub through the ground meat before forming the burger. The flavor will be throughout the entire piece of meat. Use 1–2 teaspoons of rub per 500 grams of ground meat.
  • Sprinkle on the outside — apply the rub to the formed burger just before grilling. This gives a crispy, flavorful crust, but the inside remains neutral.

The best approach: a light layer in the ground meat + a layer on the outside. This way, you get flavor inside and a crust outside.

Which Rub Works Best on Burgers?

  • Tex-Mex — the classic burger choice. Cumin, chili, and smoked paprika give a smoky-spicy result.
  • Memphis BBQ Rub — sweet-smoky, gives a beautiful caramelization on the crust.
  • Korean Rub — for an Asian smash burger with an umami-rich crust.

Smash Burger Technique with Rub

The smash burger — a thin burger pressed flat on a hot cast iron griddle — benefits immensely from a rub. The Maillard reaction is maximized due to full contact with the hot metal.

  1. Form loose ground meat balls of 80–100 grams.
  2. Sprinkle rub over the outside.
  3. Place on a scorching hot cast iron griddle and press flat with a spatula.
  4. Grill for 2 minutes, flip, add cheese, and grill for another 1 minute.

How to Use a Rub on Sausage?

Sausage already has internal seasonings — a rub on the outside adds an extra layer of flavor and provides a better crust. Two methods:

  • Rub directly on the casing — lightly coat the sausage with oil and sprinkle the rub over it. Press lightly so the rub adheres.
  • Rub in a cut — make diagonal cuts in the sausage (not all the way through) and rub the seasoning into the cuts. This allows for more flavor penetration.
