The even, intense contact with the hot metal gives a perfect crust — but it also places different demands on your dry rub than an open grate. Why Does Sugar Burn Faster on a Plancha?

On a plancha or cast-iron griddle, the contact between the meat and the hot metal is complete and continuous. There is no air circulation to cool it. This means that sugar in the rub reaches its burning temperature (170–180°C) faster than on an open grate.

Therefore, when using a plancha, preferably use rubs with little or no sugar, or slightly lower the temperature.

Which Rubs Work Best on a Plancha?

  • Shawarma — low sugar, lots of herbs. Perfect on chicken, lamb, and vegetables on the plancha
  • Tex-Mex — low sugar, smoky-spicy. Excellent on beef and hamburgers
  • Korean Rub — medium sugar, but the umami-rich spices give a great crust on the plancha

Use Memphis and Carolina Gold (more sugar) at lower temperatures or with short contact to prevent burning.

How to Use a Rub on a Plancha?

  1. Preheat the plancha or cast-iron griddle well — at least 10 minutes on high heat
  2. Pat the meat dry and apply the rub
  3. Add a small amount of oil to the griddle (not on the meat) — this prevents sticking
  4. Place the meat on the hot griddle and press lightly for maximum contact
  5. Only turn when the meat releases — never force it
  6. Lower the heat slightly if the rub darkens too quickly

Cast Iron Maintenance After Use with Rub

Spices and sugar from a rub can bake onto cast iron. Clean the griddle immediately after use:

  • Scrape off residue with a metal spatula while the griddle is still warm
  • Wipe clean with a damp cloth — no soap, as it damages the seasoning
  • Pat dry and rub with a thin layer of neutral oil
