Alabama white sauce is America's most underrated BBQ sauce — and one of the most surprising. While the rest of the BBQ world revolves around tomato-ketchup bases and brown sugar, Alabama goes the other way: mayonnaise, apple cider vinegar, horseradish, and black pepper. The result is white, creamy, and tangy — and it's unbeatable with smoked chicken.
Origin
Alabama white sauce was invented by Big Bob Gibson in Decatur, Alabama, in the 1920s. Gibson completely drenched his smoked chickens in it after smoking — a technique still used in his restaurant today. The sauce has since become a symbol of the North Alabama BBQ style and stands apart from the rest of the American regional BBQ traditions, all of which are tomato-based.
Alabama white sauce — basic recipe
For about 300 ml:
- 200g mayonnaise (full-fat, not light)
- 60 ml apple cider vinegar
- 1 tbsp horseradish (freshly grated or from a jar)
- 1 tsp black pepper — coarsely ground
- 1 tsp sugar
- ½ tsp salt
- ½ tsp garlic powder
- Optional: 1 tsp Dijon mustard for extra depth
- Optional: ¼ tsp cayenne pepper for heat
Preparation: Whisk all ingredients together until a smooth sauce. Taste and adjust — more vinegar for tangier, more mayo for creamier. Let it rest in the refrigerator for at least 1 hour before serving — the sauce improves as the flavors meld. Keeps for 1 week in the refrigerator.
What to use Alabama white sauce with?
- Smoked chicken — the classic application. Dip the chicken completely in it after smoking, or serve as a dipping sauce on the side.
- Chicken wings — as a dipping sauce with grilled or smoked wings. An excellent alternative to ranch or blue cheese dressing.
- Fish — surprisingly good with smoked mackerel, salmon, or trout. The acidity of the vinegar balances the fat of the fish.
- Vegetables — as a dipping sauce with grilled vegetables: eggplant, zucchini, bell peppers.
- Pulled pork sandwich — a spoonful on the sandwich instead of the usual sweet BBQ sauce. A fresher, less sweet option.
