01 — Paprika — Spain and Hungary
Paprika powder is the backbone of many BBQ rubs. The best paprika comes from two regions: La Vera in Spain (smoked over oak, deep and smoky) and Kalocsa in Hungary (sweet and brightly colored). Smoked paprika from La Vera is what gives Memphis and Tex Mex rubs their characteristic depth.

Cumin is one of the oldest spices in the world and a key ingredient in Shawarma and Tex Mex rubs. The best cumin comes from India (Rajasthan) and Iran. Freshly ground cumin has a warm, earthy aroma that you immediately recognize — and which becomes even more intense when heated on the BBQ.
03 — Gochugaru — Korea
Gochugaru are dried and ground Korean chili peppers — the heart of the Korean BBQ Rub. The peppers are sun-dried and have a fruity, mild heat that differs from regular cayenne pepper. Authentic gochugaru comes exclusively from Korea and cannot be replaced by other chili powders.
04 — Fennel Seed — Italy and India
