Where do our spices come from? Kerala, India

Behind the scenes · The Rub Kitchen

Every rub from The Rub Kitchen starts with the right spices. Not the cheapest, not the most available, but the best. And those come from specific places in the world, where climate, soil, and tradition determine the flavor.

In this article, we'll take you to Kerala, India, the spice region that forms the basis of a large part of our assortment.

01

Why Kerala?

Kerala, on India's southwest coast, has been known for centuries as the world's spice region. Black pepper, cardamom, cinnamon, ginger, and turmeric grow here in optimal conditions: a tropical climate, abundant rain, and rich, volcanic soil.

The spices from Kerala have a higher concentration of essential oils than similar spices from other regions. This means more aroma, more flavor, and longer shelf life—exactly what you want in a premium dry rub.

Freshly mixed to order

We only mix our rubs after you place your order. This way, you always benefit from maximum freshness and the full aromatic profile of spices from Kerala and other regions of origin.

02

Which spices come from Kerala?

These ingredients in our rubs are sourced from or based on the spice tradition of Kerala and its surroundings:

  • Black pepper — the base of almost every rub. Kerala pepper has a sharper, more complex profile.
  • Cardamom — used in our Shawarma rub for Middle Eastern depth.
  • Turmeric — the golden yellow color of our Carolina Gold rub.
  • Ginger — warmth and freshness in several rubs.
  • Cinnamon — the sweet depth in Shawarma and Korean BBQ rub.
