Short answer: Toscana Fire is an Italian-inspired BBQ rub with double fennel seed, smoked paprika, brown sugar, and cayenne. Warm, aromatic, and versatile — excellent on chicken, lamb, and pork.

Italy doesn't have a BBQ tradition like Texas or Jamaica — but Italian cuisine has something many BBQ styles lack: the art of simplicity. Good ingredients, minimal fuss, maximum flavor.

Toscana Fire translates that principle to the grill. Fennel seed — roasted for depth, ground for even distribution — is the heart of this rub. Smoked paprika provides color and smoky flavor. Cayenne and allspice provide the "fire." The result is a rub that works equally well for a summer BBQ as for an autumn evening with the kamado.

Why fennel seed?

Fennel seed is the hallmark ingredient of Tuscan cuisine — think Italian sausage, porchetta, and bistecca alla Fiorentina. Its sweet, anise-like aroma is unmistakable and works surprisingly well on the grill: when heated, it caramelizes lightly and becomes deeper and nuttier.

In Toscana Fire, we use fennel seed twice: roasted for a more intense, nutty flavor and ground for even distribution over the meat. That double fennel seed is what sets this rub apart from all others.

Roasting fennel seeds

Always dry-roast fennel seeds in a frying pan over medium heat — 2 to 3 minutes, until fragrant. Let cool before use. This is exactly what we do before mixing the rub.

The ingredients

Toscana Fire combines:

Fennel seed (double)

Roasted + ground. Sweet, anise-like, and warm — the heart of the rub.

Smoked paprika

Pimentón ahumado. Color, smoky flavor, and depth without wood smoke.

Brown sugar

Caramelization and bark formation. Keep temperature below 185°C.

Cayenne pepper

The "fire" in Toscana Fire. Direct heat that builds up.

Allspice

Clove, cinnamon, and nutmeg in one. Adds depth and complexity.

Garlic & onion

The savory base. Heat-resistant and evenly distributable.

On which meats?

Chicken

The classic use. Chicken thighs 30-40 min at 170-185°C. Core temperature 74°C. Serve with lemon and yogurt sauce.

Lamb

Toscana Fire and lamb are a natural combination. Lamb chops 3-4 min per side direct. Core temperature 60°C for medium-rare.

Pork

Pork tenderloin or chops. 20-25 min indirect at 170°C. Core temperature 63°C. Juicy and aromatic.

Vegetables

Fennel, zucchini, eggplant, and bell peppers. 10-15 min indirect with olive oil. Excellent vegetarian option.

Use olive oil as a binder

With Toscana Fire, olive oil works better than neutral oil — it enhances the Mediterranean character of the rub. A thin layer of extra virgin olive oil before applying the rub adds a subtle fruity undertone that pairs perfectly with the fennel seed.

Temperature & technique

BBQ temperature

170-185°C. The brown sugar caramelizes beautifully at this temperature. Too hot and the sugar will burn.

Method

Indirect grilling, last 5 minutes direct for a crispy bark. Don't flip too often.

Smoking wood

Optional: apple wood or cherry wood. Mild and fruity — complements the fennel seed without overpowering it.

Marinating

At least 2 hours, preferably overnight. The fennel seed needs time to fully release its flavor.

Serving — the Italian table

Toscana Fire calls for simple, honest side dishes that support the rub's flavor:

  • Lemon — freshly squeezed over the meat immediately after grilling. Indispensable.
  • Grilled fennel — enhances the fennel seed in the rub. 15 min indirect with olive oil.
  • Yogurt sauce — Greek yogurt, garlic, lemon zest, and fresh mint.
  • Focaccia or ciabatta — warm up briefly on the grill, dip in the dripped olive oil.
  • Grilled zucchini — simple and quick, 3 min per side with sea salt.
