Korean BBQ Style Guide — more than just chicken
Deel
Korean BBQ is one of the most social and flavorful dining cultures in the world. Not just one dish, but a whole table full of flavors, textures, and dipping sauces. This is the complete style guide.
What makes Korean BBQ unique?
With Korean BBQ, you grill at the table — everyone participates, everyone chooses their own pace. It's not about one large piece of meat, but many small pieces that cook quickly and are eaten immediately. Combined with banchan (small side dishes) and dipping sauces, it’s a complete dining experience.
The flavor pillars of Korean BBQ are gochugaru (Korean chili flakes), sesame, ginger, and garlic. Fruity, spicy, and aromatic — a flavor profile unlike any other.

01 — More than just chicken
Korean BBQ is more versatile than most people think:
- Pork Belly (Samgyeopsal) — the most popular Korean BBQ dish. Thick slices of pork belly directly on the grill, eaten in lettuce with rice and dipping sauce. Pork Belly on the BBQ — recipe
- Beef (Bulgogi) — thinly sliced beef, marinated and quickly grilled. Sweet, tender, and irresistible. Beef on the BBQ — all tips
- Chicken Wings — crispy on the outside, juicy on the inside. With gochugaru rub, an absolute winner. Korean Chicken Wings Recipe
- Tofu — firm tofu on the grill with Korean rub is an excellent vegetarian option.
02 — The banchan: small side dishes
Korean BBQ is always served with banchan — small bowls of side dishes. Classic options:
- Kimchi — fermented cabbage, sour and spicy
- Cucumber in rice vinegar and sesame
- Roasted seaweed
- Steamed rice
- Lettuce and perilla leaves for wrapping meat
Pro tip: Make a quick dipping sauce from soy sauce, rice vinegar, sesame oil, and a pinch of sugar. Dip the grilled meat in it for an authentic Korean flavor experience.
03 — How to use the Korean BBQ Rub at home?
- Rub the meat generously with a little neutral oil
- Apply the Korean BBQ Rub and rub in well
- Let marinate for at least 30 minutes, preferably overnight
- Grill over high heat for crispy edges
- Serve immediately with rice, lettuce, and dipping sauce
