Memphis BBQ — the classic American style explained
Deel
Memphis is one of America's big four BBQ cities. No sauce, no fuss — just meat, smoke, and a good dry rub. In this article, we'll explain what makes Memphis BBQ so special and how you can recreate it at home.
What is Memphis BBQ?
Memphis BBQ revolves around "dry ribs" — spare ribs prepared exclusively with a dry rub, without sauce. The rub classically consists of paprika, brown sugar, garlic, and a hint of mustard. The result: a deep, smoky crust with a sweet and spicy flavor that speaks for itself.
Memphis is also home to "wet ribs" — spare ribs that are basted with a thin sauce just before serving. But purists swear by dry. And so do we.
Which meat?
Memphis is the kingdom of the spare rib. But pulled pork and chicken also do excellently with a Memphis-style rub. The sweet and smoky flavor of paprika and brown sugar pairs well with almost any meat cooked low and slow.

How to use Memphis BBQ Rub?
Generously rub the meat with a little neutral oil. Apply the rub — don't be stingy. Let it sit for at least 30 minutes, preferably overnight in the refrigerator. Grill over indirect heat, low and slow (110–130°C). Let the meat rest before slicing.
Place a pan of water or apple juice under the meat for extra moisture during cooking. The steam keeps the meat juicy while the exterior remains dry and crispy.
The bark: the secret of Memphis BBQ
The bark is the dark, crispy outer crust that forms as the dry rub caramelizes on the meat. In Memphis BBQ, the bark is everything. It's why you don't need sauce — the flavor is in the crust.
For a good bark: use enough rub, cook at a low temperature, and open the lid as little as possible. Patience is the secret ingredient.

Frequently asked questions about Memphis BBQ
What is the difference between Memphis BBQ and other BBQ styles?
Memphis BBQ stands out for its use of dry rubs without sauce. Where Texas focuses on brisket and Kansas City on sauces, Memphis is all about spare ribs with a crispy bark of herbs and smoke.
What wood do you use for Memphis BBQ?
Hickory is the classic smoking wood for Memphis BBQ — it provides a strong, smoky flavor that perfectly complements the sweet and spicy rub. Applewood is a milder option for those who prefer less smoke.
How long do you cook Memphis-style spare ribs?
Classic Memphis spare ribs are cooked low & slow at 110–130°C for 5–6 hours. The 3-2-1 method (3 hours smoking, 2 hours wrapped in foil, 1 hour open) works excellent.
Do you use sauce with Memphis BBQ?
Traditional Memphis "dry ribs" are served without sauce — the bark and rub are the flavor enhancers. "Wet ribs" receive a thin layer of sauce just before serving, but purists swear by dry.
