Corn on the cob on the BBQ — roasted with dry rub
Deel
Grilled corn is one of the most underrated BBQ dishes. Sweet, crispy, and with a light smoky flavor – and with a good dry rub, it becomes a main course in itself.
Why corn on the BBQ?
Corn is naturally sweet and juicy. On the grill, the sugars caramelize, creating a light smoky flavor that perfectly balances its sweetness. With a dry rub, you add extra depth and character – from sweet-smoky to spicy and aromatic.

01 – With or without husk?
With husk: The husk protects the corn and retains moisture. The result is juicier but less roasted. Soak the corn in water for 30 minutes before placing it on the grill – this prevents the husk from burning too quickly.
Without husk: Directly on the grate gives more caramelization and a deeper smoky flavor. The kernels become lightly roasted and crispy. This is the method for maximum flavor.
Pro tip: Start with the husk (10 minutes indirect) and finish without the husk (5 minutes direct). This combines juiciness with a roasted aroma. More about direct vs. indirect heat: Direct vs. Indirect Heat on the BBQ
02 – Which rub pairs with corn?
Corn is versatile and pairs well with many flavors:
- Tex Mex – the classic combination. Cumin and chili enhance the sweetness of the corn. More about cumin in BBQ
- Korean – gochugaru and sesame give a unique, fruity heat.
- Shawarma – warm and aromatic, perfect for a Middle Eastern BBQ evening.
- Memphis – sweet-smoky and accessible for everyone.

03 – Recipe: Grilled corn with Tex Mex rub
- Remove the husk and pat the corn dry
- Brush generously with melted butter or olive oil
- Sprinkle the Tex Mex BBQ Rub generously over it and rub in
- Grill directly over high heat for 10–12 minutes, turning regularly
- Serve with a squeeze of lime juice and, if desired, some sour cream
Pro tip: Mix soft butter with a teaspoon of Tex Mex rub and spread it on the hot corn straight off the grill. The butter melts into the kernels, giving an intense flavor.
Corn as a side or main dish?
Grilled corn with dry rub is strong enough to serve as a main dish for vegetarians – but also works excellent as a side dish with spareribs, pulled pork, or chicken.
