Maillard reaction — why BBQ tastes so good

You place a steak on the scorching hot grill, and within seconds, you hear it sizzle, see the color change, and smell that irresistible aroma. What exactly happens then has a name: the Maillard reaction. It's the chemical basis of almost everything that makes grilled food so delicious.
What is the Maillard reaction?
The Maillard reaction is a chemical reaction between amino acids (from proteins) and reducing sugars that occurs with heat. The result: hundreds of new flavor and aroma compounds, a brown color, and a crispy crust. The reaction is named after the French chemist Louis-Camille Maillard, who described it in 1912.
Important: the Maillard reaction is not the same as caramelization. Caramelization is the breakdown of sugars without proteins. Both contribute to the flavor of BBQ, but in different ways.
When does the Maillard reaction occur?
The reaction noticeably begins at 140–15°0°C and accelerates above 160°C. Below 120°C, it proceeds too slowly to form a visible crust. This is why you need a scorching hot grill for a good sear — low & slow at 110°C will result in virtually no Maillard reaction on the surface.
Maillard reaction on the BBQ — how to maximize it?
1. Dry surface
Moisture on the meat must first evaporate before the temperature rises high enough for the Maillard reaction. Always pat meat dry with paper towels before grilling. A dry rub also helps — it draws moisture from the meat to the surface, where it evaporates and accelerates the reaction.
2. High direct heat
Use direct heat of at least 230°C for searing. A cast iron grate or a cast iron skillet on the BBQ retains heat better and provides a more intense Maillard reaction. Read more about how to prepare the grate correctly.
3. Sugars in the rub
Brown sugar and honey in a rub accelerate caramelization and work together with the Maillard reaction for a deeper bark. Note: sugar burns above 180°C — use less sugar for direct heat than for low & slow. Check out our rub guide for the right balance.
4. Not too much meat at once
Too much meat on the grill lowers the temperature and creates steam instead of dry heat. Grill in smaller batches for a better Maillard reaction per piece of meat.
Maillard reaction vs bark — what's the connection?
Bark is the end result of a prolonged combination of the Maillard reaction, caramelization, and dehydration of the surface during low & slow cooking.
