BBQ meat sticks to the grill — what do I do?

You put your meat on the grill, try to flip it — and it tears in half because it's stuck. This is one of the most common BBQ frustrations, but also one of the easiest to prevent. The cause is almost always one of three things: a grill that's too cold, an ungreased grate, or flipping too early.

Cause 1: Grate not oiled

A dry grate is a sticky grate. Always oil the grates with a heat-resistant oil (sunflower, grapeseed, or coconut oil) BEFORE putting the meat on. Use a piece of paper towel folded in tongs — dip it in oil and wipe down the grates. Do this when the grill is already up to temperature.

Cause 2: Grill not up to temperature

Meat sticks least to a searing hot grate. If the grill is too cold, the meat will adhere to the metal. Always preheat your BBQ for 10–15 minutes before putting meat on. For direct heat, you want grates at 230–280°C. Check out our guide on controlling BBQ temperature for details.

Cause 3: Flipping too early

This is the most common mistake. Meat will naturally release from the grate once it has formed a crust. If you flip too early, you break that crust and the meat sticks. Rule: only flip when the meat releases easily. Do you feel resistance? Wait another 1–2 minutes.

Cause 4: Grate not clean

Cause 5: Meat too wet (marinade or moisture)

Cause 6: Wrong type of grate

Cast iron grates retain heat better and are less sticky than thin stainless steel grates. If you frequently experience sticking, investing in cast iron grates can make a difference.

Checklist: how to prevent meat from sticking

  • ✅ Preheat the BBQ for 10–15 minutes to temperature
  • ✅ Oil the grates with heat-resistant oil
  • ✅ Pat meat dry before grilling
