Short answer: To make Jamaican Jerk chicken, marinate chicken thighs with Jerk rub for at least 4 hours and grill at 185–195°C. Core temperature 74°C. Serve with rice, beans, and mango.

Jamaican Jerk is one of the most distinctive BBQ styles in the world. Spicy from the scotch bonnet pepper, smoky from the pimento wood, sweet from the allspice. It's a flavor profile you won't forget.

You don't need a Jamaican beach to make this at home. With the right rub, chicken thighs, and a hot BBQ, you'll get surprisingly close to the original.

The Origin of Jamaican Jerk

Jerk BBQ originated with the Maroons — escaped slaves in the Jamaican mountains who preserved meat with spices and slowly smoked it over pimento wood. The combination of allspice, scotch bonnet pepper, and thyme is the basis of any authentic Jerk rub.

Traditionally, Jerk is made over pimento wood in a half-barrel. At home, you can substitute pimento wood with smoking chips and the scotch bonnet with a well-composed dry rub. The result will be different, but the spirit of the flavor is the same.

What makes Jerk unique?

The combination of allspice and scotch bonnet pepper is nowhere else as prominent. Allspice tastes like a mix of cinnamon, cloves, and nutmeg. Together with the heat of the pepper, it creates a complex, layered flavor profile.

What do you need?

For 4 people:

  • 1.2–1.5 kg bone-in, skin-on chicken thighs
  • Jamaican Jerk rub — 65g per 1.5 kg chicken
  • Olive oil or apple cider vinegar as a binding layer
  • Smoking chips: pimento wood or cherry wood
  • Meat thermometer
  • BBQ with lid

Always use bone-in, skin-on chicken thighs for Jamaican Jerk. The skin protects the meat at higher temperatures and becomes crispy and full of flavor. Without skin, the chicken dries out faster.

Marinating — at least 4 hours

  1. Pat the chicken thighs dry with paper towels.
  2. Score the skin in a few places so the rub can penetrate under the skin.
  3. Rub a thin layer of olive oil or apple cider vinegar over the meat.
  4. Apply the Jamaican Jerk rub generously — also under the skin and on the underside.
  5. Cover and refrigerate for at least 4 hours. Overnight will give the deepest flavor.
  6. Remove from the refrigerator 30 minutes before grilling.

Grilling — the technique

Temperature

185–195°C. Slightly higher than other chicken rubs because Jerk rub contains little sugar and can tolerate more heat.

Method

Start 25–30 minutes indirect. Finish 5–10 minutes direct for crispy skin. Flip halfway through.

Smoking wood

Add pimento wood or cherry wood chips to the coals. Let the smoke stabilize for 10 minutes before placing the chicken on it.

Core temperature

74°C in the thickest part of the thigh, not against the bone. Skin may darken — that's the Jerk bark.

Dark skin is not an issue

Jamaican Jerk chicken is naturally darker than other BBQ chicken. The allspice and pepper color quickly. As long as the core temperature is 74°C, it's good. Trust the thermometer, not the color.

Serving like true Jerk

Jamaican Jerk chicken is traditionally served with:

  • Rice and peas — rice cooked with coconut milk and kidney beans
  • Festival — sweet fried dumplings, the Jamaican answer to bread
  • Grilled mango — the sweetness tempers the heat of the Jerk
  • Coleslaw — fresh and cool as a counterpoint
Adjusting spiciness
