How to store BBQ rubs? Shelf life and tips

A good BBQ rub is an investment in flavor. But how do you store it so it stays fresh as long as possible? These are the rules for optimal shelf life.


How long do BBQ rubs last?

Dry herbs and spices don't quickly lose their safety — but they do lose their flavor. A well-stored dry rub remains at full flavor strength for up to 12 months. After that, the flavors become flatter and less intense, but it's not dangerous.

The enemies of a good rub are: moisture, light, heat, and air. Avoid these four, and your rub will stay good for a long time.

01 — Store dry

Moisture is the biggest enemy of a dry rub. Even a small amount of moisture can cause clumping and promote mold. Always use a dry spoon to scoop rub from the packaging — never sprinkle directly over the meat from the bag, as steam and moisture will then enter the packaging.

Pro tip: Scoop the required amount of rub into a separate container before applying it to the meat. This keeps the rest of the packaging dry and clean.


02 — Store dark and cool

Light and heat accelerate the breakdown of herbs. Store your rubs in a dark cupboard, away from the oven or stove. A kitchen cupboard at room temperature is ideal — the refrigerator is not necessary and can actually attract moisture through condensation.

03 — Store airtight

04 — How do you know if a rub is still good?

Smell the rub. A fresh rub has a powerful, clear scent. If the scent is weak or musty, the rub is past its prime.

  2. Weak scent → almost gone, use quickly
  3. Musty or strange scent → discard
  4. Visible moisture or mold → always discard
