How Long Does BBQ Rub Last After Opening?

You've bought a bag of BBQ rub, used some, and the rest is sitting in your cupboard. But how long does that rub actually last? And does it matter if the bag is already open or not? Below is everything you need to know about the shelf life of dry rubs.


How long does BBQ rub last?

As a general rule:

  • Unopened: 2–3 years when stored properly (dark, dry, cool)
  • After opening: 6–12 months for optimal flavour
  • Technically: a dry rub without fresh ingredients never really goes ‘bad’ — but gradually loses flavour intensity

How to best store BBQ rub?

The enemy of a dry rub is moisture, light, and heat. Ensure:

  • Airtight seal — close the bag tightly after use, or transfer the rub to a glass jar with a lid
  • Dark place — avoid direct sunlight. A kitchen cupboard is ideal, a glass jar on the counter is less so
  • Dry and cool — not next to the stove or above the dishwasher. Heat and steam accelerate the loss of aromas
  • Never use damp spoons — moisture in the jar causes clumping and can lead to mould

How do you know if a rub is still good?

While a dry rub rarely spoils, it can lose its flavour. Check these points:
  • Smell — smell the rub. Fresh and herbaceous? Still good. Musty, dusty, or barely noticeable? Almost past its prime.
  • Colour — faded colour indicates loss of aromas due to light exposure
  • Clumping — small clumps are not a problem (moisture has been in it). Large hard clumps with a strange smell — discard
  • Mould — if mould is visible, discard immediately

Why does a rub lose flavour over time?

Dried herbs and spices contain volatile aromatic compounds (essential oils) that slowly evaporate. This process is faster with:

  • Higher temperatures
  • Exposure to light and oxygen
  • Ground spices (more surface area = faster loss) versus whole spices

A rub that is 2 years old still works — but you'll need more for the same flavour intensity.
