BBQ too hot or too cold — how do you regulate the temperature?

Too high a temperature and your meat burns on the outside while remaining raw on the inside. Too low a temperature and you'll be waiting for hours with no result. Temperature control is the most underestimated skill in BBQ — but once you understand it, everything becomes easier.

Why Temperature Control is So Important

Every preparation has its own temperature zone. Fast grilling (steak, chicken) works at 230–280°C direct heat. Low & slow (pulled pork, brisket) works at 110–130°C indirect heat. How to Increase the Temperature?

  • Open the vents further — more oxygen = higher temperature
  • Add more burning coals — use a chimney starter for quick ignition
  • Remove the lid briefly — provides a short heat peak (but do this sparingly)
  • Use dry wood or briquettes instead of damp or cheap charcoal

How to Lower the Temperature?

  • Partially close the vents — less oxygen = lower combustion
  • Move the meat to an indirect zone — away from the coals
  • Leave the lid ajar — allows heat to escape
  • Add a water pan — absorbs heat and stabilizes the temperature

Setting Up Direct vs. Indirect Heat Zones

What if the Temperature Keeps Fluctuating?

Fluctuating temperatures are often caused by:

  • Too few coals (add more in time)
  • Damp charcoal (always use dry, quality charcoal)
  • Wind (turn the BBQ so the air intake is out of the wind)
  • Lid opened too often (temperature drops 20–30°C each time)

Always Use a Thermometer
