Salt, Osmosis & Dry Brining: The Science Behind Better BBQ Meat

Salt is the oldest and most powerful ingredient in the kitchen. On the BBQ, it does more than enhance flavors: it changes the structure of meat at a molecular level. If you understand the chemistry behind dry brining, you'll understand why this is the most effective preparation for any piece of meat on the smoker or grill.

What is dry brining?

Dry brining is rubbing meat with salt (and optional herbs) and then letting the meat rest uncovered in the refrigerator—for at least a few hours, but preferably 24 to 48 hours. Unlike wet brining (where meat is submerged in a brine solution), you don't add any extra moisture. Yet, the result is juicier, more flavorful meat. How is this possible?

The three phases of osmosis in dry brining

Phase 1: moisture is drawn out (0–30 minutes)

As soon as salt is applied to the meat, osmosis begins. Through osmosis, water moves from a low salt concentration (inside the meat) to a high salt concentration (outside). The meat 'sweats': a layer of moist brine appears on the surface. This is the phase that many people mistakenly consider detrimental.

Phase 2: brine is absorbed (30 minutes–4 hours)

The brine on the surface dissolves the salt, forming a concentrated brine solution. Through diffusion, this brine solution is drawn back into the meat—now along with the salt. The meat reabsorbs its moisture, but now enriched with salt that penetrates deep into the fibers.

Phase 3: protein denaturation and moisture retention (4–48 hours)

Salt partially denatures proteins: it breaks open the protein structures. This has two effects:

  • The proteins can retain more moisture during heating—the meat loses less juice during cooking
  • The texture becomes softer and the flavor more intense, because salt has penetrated deeper than with superficial salting

Dry brine vs. wet brine: which works better?

Both methods have their place, but dry brining is generally preferred for BBQ preparations:

  • Dry brine → drier exterior, better bark formation, more concentrated flavor
  • Wet brine → more moisture addition, but also dilutes the flavor; surface is wetter which hinders bark formation

For poultry (chicken, turkey), wet brining can be useful due to its lower fat content. For beef, pork, and lamb, dry brining is almost always superior.

How much salt do you use for dry brining?

The rule of thumb is 0.5% to 1% of the meat's weight in salt. Practically:

  • 1 kg meat → 5 to 10 grams of salt (±1 to 2 teaspoons of coarse salt)
  • Preferably use coarse sea salt or kosher salt—fine salt dissolves too quickly and can make the meat too salty
  • Avoid iodized salt—iodine can leave a slightly bitter aftertaste

How long should you dry brine?

The optimal duration depends on the thickness and type of meat:

  • Thin cuts (steaks, chicken breast) — minimum 45 minutes, ideally 4–8 hours
  • Thick cuts (brisket, pulled pork shoulder) — minimum 12 hours, ideally 24–48 hours
  • Spare ribs — 8 to 24 hours gives noticeably better results

After dry brining, remove the meat from the refrigerator and do not pat it dry—the surface is perfectly ready for applying your rub.

Combining dry brine with a BBQ rub

Dry brining and a BBQ rub are complementary. The salt from the brine prepares the protein structure; the herbs and sugars from the rub then build the flavor crust. Apply the rub immediately after dry brining (for short preparations) or after the resting phase in the refrigerator (for long preparations). Common mistakes in dry brining

  • Not giving enough time—10 minutes is not enough; the brine needs time to reabsorb
  • Covering meat with foil—this makes the surface moist and prevents a good bark from forming
  • Too much salt—more is not better; above 1.5% the meat becomes too salty
  • Applying rub too early—sugars in the rub can caramelize too intensely during long dry brining
