Mackerel on the BBQ — Recipe with Dry Rub | Crispy & Smoky
Mackerel is the most underrated fish for the BBQ — fatty, flavorful, affordable, and ready in 10 minutes. Its high fat content makes mackerel perfect for the BBQ: the meat stays juicy, the skin becomes crispy, and the smoky flavor of the BBQ perfectly complements the rich fish taste. With a dry rub, it gets even better.
Why mackerel works so well on the BBQ
- High fat content — the fat protects the meat from drying out and provides a rich flavor
- Firm texture — mackerel doesn't fall apart on the grill like white fish
- Quick cooking — ready in 8–10 minutes, ideal as a starter or main course
- Affordable — one of the most affordable fish varieties in the Netherlands
- Sustainable — mackerel is on the MSC list as a sustainable choice
Which dry rub to use?
- Toscana Fire — Fennel seeds, smoked paprika, allspice, cayenne. The perfect match for mackerel. Fennel and fish are a classic Mediterranean combination — the anise-like flavor of fennel enhances the rich fish taste. Aromatic and elegant.
- Shawarma BBQ Rub — Cumin, coriander, cinnamon. Warm and Middle Eastern — gives mackerel a deep, aromatic flavor. Serve with tzatziki.

What you'll need?
Ingredients (for 2 people)
- 2 whole mackerel (cleaned, approx. 300–400g each)
- 2 teaspoons dry rub per fish
- 2 tablespoons olive oil
- 1 lemon — for serving
- Optional: fresh herbs (thyme, rosemary) in the belly cavity
Equipment
- BBQ (charcoal or gas)
- Fish grill basket or grill mat — highly recommended
- Tongs
Step-by-step recipe
Step 1 — Preparation
- Pat fish dry — thoroughly pat the mackerel dry with paper towels, both outside and in the belly cavity. This is crucial for crispy skin.
- Score the fish — make 3–4 diagonal cuts on both sides of the fish, down to the bone. This ensures even cooking and allows the rub to penetrate deeper.
- Rub with oil — generously rub the fish with olive oil, also in the cuts and the belly cavity.
- Rub in dry rub — rub the dry rub on both sides and into the cuts. Also put a little rub in the belly cavity.
- Optional: place fresh thyme or rosemary in the belly cavity for extra aroma.
- Let it sit — 15–30 minutes at room temperature.
Step 2 — Prepare the BBQ
- Prepare the BBQ for direct medium-high heat — 180–200°C (350–400°F).
- Grease the grates well — this is the most important step to prevent sticking. Rub the grates with a paper towel soaked in oil, just before grilling.
- Optional: add a piece of smoking wood for extra smoky flavor — apple or cherry pairs well with fish.
Step 3 — Grill (8–10 minutes)
- Place the mackerel on the well-greased grates or in a fish grill basket.
- Grill for 4–5 minutes per side without moving — let the skin release from the grates on its own.
- Carefully flip with a wide spatula or tongs.
- The fish is done when the meat easily separates from the bone and the skin is crispy and golden brown.
Step 4 — Serving
- Carefully remove from the BBQ — mackerel is delicate when cooked.
- Serve immediately with a lemon wedge.
- No resting time needed — fish should be served immediately.
Core temperature for mackerel
| Doneness | Core Temperature | Texture |
|---|---|---|

| Ideal (recommended) | 60–65°C (140–150°F) | Fully cooked, juicy and tender |
| Overcooked | 70°C+ (160°F+) | Dry and flaky |

Tips for perfect grilled mackerel
- Patting dry is mandatory — moisture is the enemy of crispy skin and causes sticking
- Grease the grates well — fish sticks more easily than meat. Grease the grates just before grilling
- Use a fish grill basket — makes flipping much easier and prevents the fish from falling apart
- Make cuts — ensures even cooking and allows the rub to penetrate deeper
- Don't force it — if the fish sticks, it's not ready to flip yet. Wait another minute
- Medium heat — not too hot, otherwise the skin will burn before the meat is cooked through
Serving suggestions
- Mediterranean — Toscana Fire mackerel + chimichurri + grilled lemon + bread
- Middle Eastern — Shawarma mackerel + tzatziki + flatbread + cucumber
- Simple — mackerel + lemon + olive oil + fresh herbs
Frequently asked questions
How long should mackerel be on the BBQ?
Approx. 8–10 minutes total — 4–5 minutes per side over direct heat at 180–200°C (350–400°F). The fish is done when the meat easily separates from the bone.
Do I need to scale mackerel for the BBQ?
Mackerel has small, soft scales that you can leave on — they will get crispy on the BBQ. If you want to remove them, scrape with the back of a knife from tail to head.
Can I use mackerel fillets instead of whole fish?
Yes — fillets are easier to handle. Grill skin-side down for 3–4 minutes, and only flip once the skin is crispy. Fillets do not require a fish grill basket.
Which smoking wood pairs well with mackerel?
Apple or cherry — light, fruity smoke that enhances the fish flavor without overpowering it. Avoid hickory or mesquite — too heavy for fish. → Smoking wood guide
