Korean BBQ Rub — Everything You Need to Know

Gochugaru, sesame, and ginger — the flavor building blocks of the Korean BBQ tradition. This rub is sweet, spicy, and umami all at once, with a fruity heat that is fundamentally different from Western chili. For chicken wings, short ribs, and anyone who wants to give BBQ a new dimension.

Flavor Profile

  • Base: Gochugaru, sesame, ginger, garlic, brown sugar
  • Character: Sweet, spicy, umami, aromatic
  • Heat: ★★★☆☆ — spicy but fruity, not aggressive
  • Allergens: Sesame — contains sesame seeds

Gochugaru is key. This Korean chili flake has a fruity, mild heat that tastes very different from cayenne or jalapeño. Combined with sesame and ginger, you get a rub that works excellent both on the BBQ and in the oven.

  • Short ribs: rub generously, rest for at least 2 hours
  • Pork belly: 60g per 1.5 kg meat

Technique & tips

Gochugaru caramelizes beautifully over high heat — use direct heat for a crispy crust. Let the rub marinate for at least 30 minutes. The sesame gives a nutty finish that comes into its own best with direct heat.
