Dosage
- Chicken wings: 55–65g per 1.5 kg meat
- Short ribs: rub generously, rest for at least 2 hours
- Pork belly: 60g per 1.5 kg meat
Technique & tips
Gochugaru caramelizes beautifully over high heat — use direct heat for a crispy crust. Let the rub marinate for at least 30 minutes. The sesame gives a nutty finish that comes into its own best with direct heat.
