Kamado not reaching temperature — causes and solutions
Your kamado won't reach temperature, or it overshoots the desired temperature — these are the most common frustrations among kamado users. The kamado is one of the most stable BBQs in the world once it's at temperature, but that requires the right approach to lighting it. These are the most common causes and how to solve them.
Kamado not reaching temperature
Cause 1: Insufficient airflow
The kamado works on draw — air from the bottom, heat and smoke from the top. If one of the vents is closed too far, the fire doesn't get enough oxygen.
Solution: When lighting, open both the bottom and top vents completely. Let the temperature rise and then gradually close them to the desired position.
Cause 2: Charcoal too damp or too fine
Damp charcoal burns poorly and gives inconsistent temperatures. Fine charcoal or dust blocks the airflow from below.
Solution: Use dry, coarse charcoal or large briquettes. Store charcoal dry. Remove dust and fine pieces before filling the kamado.
Cause 3: Ash hole at the bottom is blocked
After multiple sessions, ash accumulates at the bottom of the kamado. This blocks the air intake and smothers the fire.
Solution: Stir the ash loose with an ash tool or stick before each session. Empty the ash completely after every 2–3 sessions.
Cause 4: Too little kindling or poor ignition
A small glow in the middle is not enough for a rapid temperature rise — especially in low outdoor temperatures.
Solution: Use an electric lighter (looftlighter) or 2–3 firelighters in multiple spots in the charcoal. Let the fire burn undisturbed for 10–15 minutes with the lid open before closing the lid.
Kamado overshoots temperature
Cause 1: Vents closed too early and too quickly
If you only close the vents when the kamado is almost at temperature, the thermal mass of the ceramic has already stored so much heat that the temperature will continue to rise by another 10–20°C.
Solution: Close the vents 20–30°C before the desired temperature. The kamado will still rise due to the stored heat in the ceramic.
Cause 2: Lid left open too long
Every time you open the lid, the fire gets a burst of oxygen and the temperature rises quickly.
Solution: Keep the lid closed as much as possible. Minimize the number of times you open it, especially during low & slow sessions.
Cause 3: Too much charcoal lit
With a large, burning base, the kamado has a lot of fuel and is harder to tame.
Solution: For low & slow, always light with a small glow in the center — not with a large fire. Let the temperature rise slowly.
Rules of thumb for stable temperature on the kamado
- Low & slow (110–130°C): bottom vent 1–2 cm open, top vent minimally open
- Indirect/medium (160–180°C): bottom vent 2–3 cm, top vent slightly more open
- High heat/sear (250°C+): both vents fully open
- Stable is better than fast — give the kamado 30–45 minutes to stabilize
- Cold weather requires more open vents — wind requires less
