What is ginger powder?

Ginger powder is ground dried rhizome of Zingiber officinale. Drying and grinding change its flavor profile: the fresh, pungent notes of fresh ginger give way to a warmer, sweeter, and more earthy taste with a light citrus note.

Ginger is originally from South Asia — Kerala in India is one of the main production areas in the world, along with China and Nigeria. The Rub Kitchen sources its ginger from Kerala, where it has a higher content of essential oils than cheaper varieties.

What does ginger powder taste like?

Ginger powder has a warm, slightly spicy flavor with notes of lemon and a subtle sweetness. It is less pungent than fresh ginger but more concentrated — a small amount already has a big effect. On the BBQ, it develops a beautiful warmth that combines well with sweet and smoky flavors.

Fresh vs. dried

Do not substitute fresh ginger 1:1 with ginger powder in a recipe. Ginger powder is 3–4 times stronger. If a recipe calls for 1 tablespoon of fresh ginger, use ¼ teaspoon of powder as a substitute.

Why use ginger powder in a BBQ rub?

Ginger powder adds warmth to a dry rub without the immediate pungency of pepper or cayenne. It acts as a flavor enhancer — it makes other spices more vibrant and gives a round, warm undertone that you only taste afterwards.

How to store ginger powder?

Dry, dark, and sealed. Ginger powder is best for up to 12 months after opening. It gradually loses its warmth and aroma — if it no longer smells, it no longer tastes. Store it away from heat sources and moisture.

Using ginger powder in BBQ

In a dry rub, use ginger powder as a warming element — ½ part to 4 parts paprika as a guideline. Combine with allspice, cinnamon, and black pepper for a Jamaican Jerk base, or with coriander powder and cardamom for an Asian direction. Works excellent on chicken, duck, pork, and shrimp.
