What does BBQ sauce do for low and slow meat?

BBQ sauce is almost always added at the end of cooking—never during smoking. Sugar in the sauce burns at temperatures above 150°C. The sauce is typically applied in the last 15–30 minutes as a glaze. For pulled pork and brisket, sauce is served separately so that everyone can portion it themselves.

American BBQ Sauces by Region

Kansas City Style — the most famous

Thick, sweet, and tomato-based with brown sugar, molasses, and a hint of smoke. This is the sauce most people recognize as BBQ sauce. Excellent with spare ribs, pulled pork, and chicken.

Alabama White Sauce
