Why does my BBQ rub fall off during grilling?
You've carefully rubbed your meat with a dry rub, but as soon as the meat hits the grill, the rub falls off. Frustrating — but it has a clear cause. Below, we explain why this happens and how to prevent it.
Cause 1: Meat was too wet or too dry
A dry rub adheres best to a slightly moist surface. If the meat is soaking wet (e.g., from a wet marinade), the rub will slide right off. If the meat is too dry, the rub won't stick either. Pat the meat dry with paper towels, then rub in the rub — the little bit of moisture that remains is enough for the rub to adhere.
Cause 2: Not enough pressing in
Sprinkling isn't enough. You need to actively press the rub into the meat with your palm. This creates a tight layer that won't easily come off. This is also the basis for a good bark on the BBQ.
Cause 3: Too little resting time after application
If you throw the rub on the grill immediately after applying it, the rub hasn't had time to absorb. Give the rub at least 30 minutes — preferably overnight in the refrigerator. The spices will then penetrate deeper into the meat and adhere better.
Cause 4: Too much sugar in the rub at high temperatures
Sugar in a rub caramelizes nicely at low to medium temperatures, but it burns and detaches at too high heat. Cause 5: Grill not clean or greased
A dirty or ungreased grill literally pulls the rub off the meat if the meat sticks. Always clean your grill and lightly grease the grates with oil before you start. This also prevents your meat from tearing when turning.
Cause 6: Meat turned too early
If the rub is just starting to caramelize and you turn the meat too early, the rub will stick to the grill instead of the meat. Wait until the meat easily releases from the grates — then it's ready to turn.
