What is Tex Mex BBQ?

01 — Which meat?

02 — Recipe: Tex Mex pulled chicken

  1. Generously rub chicken thighs with oil and Tex Mex BBQ Rub
  2. Marinate for at least 1 hour, preferably overnight
  3. Cook over indirect heat at 130°C until internal temperature reaches 85°C
  4. Shred the meat with two forks
  5. Serve in a wrap with guacamole, red onion, and cilantro

Pro tip: Mix a tablespoon of Tex Mex rub with sour cream and a squeeze of lime juice for a quick dipping sauce. Perfect with nachos or as a topping on a pulled chicken wrap.


03 — Tex Mex on the BBQ vs the oven
