Oven-Roasted Picanha: Juicy Results Without a BBQ

Picanha is the most popular Brazilian cut of beef — and for good reason. The thin layer of fat on top melts during cooking, giving the meat incredible juiciness and flavor. No BBQ? No problem. With an oven and a good rub, you can make an impressive picanha that rivals the grilled version.

What is picanha?

Picanha is the rump cap of the beef — the upper part of the hindquarter muscle, with a characteristic thick layer of fat. In the Netherlands, it's also known as staartstuk or rump cap. The meat is tender, flavorful, and relatively inexpensive compared to other premium cuts.

Ingredients (4 servings)

Preparation: dry brine (12–24 hours in advance)

Pat the picanha dry with paper towels. Score the fat layer crisscross (not through the meat) in a diamond pattern — this helps the rub adhere and the fat melt evenly. Sprinkle all over with coarse sea salt, place uncovered on a rack in the refrigerator, and let rest for 12–24 hours. Remove from the refrigerator 1 hour before cooking.

Step-by-step preparation

Step 1: apply rub

Rub the picanha with a thin layer of olive oil. Apply the rub generously over the entire piece of meat, including the fat layer. Press lightly with your palm.

Step 2: sear in the pan

Heat a cast iron pan over high heat. Place the picanha fat-side down in the dry pan (no oil needed — the fat will melt on its own). Sear for 3–4 minutes until the fat layer is golden brown and crispy. Flip and cook for another 2 minutes on the other side.

Step 3: finish in the oven

Preheat the oven to 180°C (top and bottom heat). Place the picanha fat-side up on a rack over a baking sheet. Insert a meat thermometer into the thickest part. Cook in the oven until the desired internal temperature:

  • Rare — 48°C–50°C
  • Medium-rare — 54°C–57°C (recommended)
  • Medium — 60°C–63°C

This will take 20–40 minutes depending on the thickness.

Step 4: rest

Remove the picanha from the oven and let it rest for at least 10–15 minutes on a cutting board, loosely covered with foil. Do not skip this step — the juices redistribute, and the meat becomes significantly juicier.

Step 5: slice

Always slice the picanha against the grain into thin slices. The grain direction changes along the length of the cut — look carefully before slicing. Serve immediately.

Serving

Oven-cooked picanha is delicious with:

  • Chimichurri (parsley, garlic, olive oil, vinegar)
  • Roasted potatoes or patatas bravas
  • Grilled bell peppers and zucchini
  • A simple green salad

Tips for the best result

  • Buy a picanha with the fat cap — without the fat cap, it's a different cut of meat
  • Dry brining is not optional — it makes the difference between good and excellent
  • Use a meat thermometer — guesswork won't work with this cut
  • Let the meat come to room temperature before cooking for more even cooking
