What is the 3-2-1 method?

The 3-2-1 method is the standard technique for making perfect spareribs on the BBQ. The name refers to the three phases: 3 hours smoking, 2 hours wrapped in foil, and 1 hour finishing with sauce. The result? Fall-off-the-bone ribs, with a beautiful bark and deep smoky aromas.
What do you need?
- 1–2 racks spareribs (baby back ribs or St. Louis cut)
- The Rub Kitchen dry rub of your choice
- Aluminum foil
- BBQ sauce (optional)
- Smoking wood: hickory or apple
- Meat thermometer
Step 1 — 3 hours smoking (uncovered)
Remove the membrane from the back of the ribs. Apply a generous amount of dry rub to both sides and let it sit for 30 minutes. Preheat your BBQ indirectly to 110–120°C and add smoking wood. Place the spareribs uncovered on the grate and smoke for 3 hours.
Step 2 — 2 hours in foil (steaming)
Wrap the ribs tightly in aluminum foil. Optionally, add a small splash of apple juice or butter pats for extra juiciness. Place them back on the BBQ at 110–120°C for 2 hours. This is the phase where the meat becomes tender and the stall is broken.
Step 3 — 1 hour finishing (glazing)
Remove the ribs from the foil. Optionally, brush with BBQ sauce and place them back on the grate for 1 hour. The bark dries out and the sauce caramelizes. Core temperature: 90–95°C for optimal doneness.
Tips for the best 3-2-1 spareribs
- Use baby back ribs for a shorter cooking time — consider 2-2-1
- Combine dry rub with smoking wood for maximum flavor layers
- Always check with a meat thermometer, not by time alone
- Let the ribs rest for 10 minutes before slicing
